Cast-Iron Italian Sausage Pizza

For the Italian Sausage:

Combine ground pork shoulder, dried oregano, dried thyme, chile flake, grated garlic, ice cold red wine, salt, sugar, and coarsely ground & toasted fennel seed in the bowl of a stand mixer. Beat on high with the paddle to emulsify.

For the Pizza:

Top your ready-to-bake pizza dough with the raw prepared sausage, black ripe olives, cheese, and any other desired toppings. For a cast-iron pizza, bake at a lower temperature of 375-400°F (190-205°C) for 20-30 minutes.
